Since the late 1980’s the Belgian firm NV Joosen-Luyckx Aqua Bio has been breeding various types of Sturgeon. Different types are being bred in large natural ponds including Siberian sturgeon (Acipenser Baeri) and Russian sturgeon (Acipenser Gueldenstaedti). The optimum moment for the right size, colour and flavour of the eggs is determent by a strict control and quality system.

Sour cream potatoes & Royal Belgian caviar.
Ingredients:
Quality baby potatoes
Chives
Sour cream
Black pepper
Sea salt (fleur de sel)
Lemon juice
Roal Belgian Caviar
Method :
Boil the potatoes in salted water skin on until they are soft but still slightly crunchy.
Crush them until they crack with the back of a fork
Season the sour cream with the pepper, sea salt, diced chives and a squeeze of lemon juice.
Put a dollop of the sour cream on the potato and top with Royal Belgian Caviar.
